Grilled Cheese and Honey Figs
What you need:
- 12 ripe black figs, halved lengthwise
- 1 lemon, zested
- 3-inch fresh rosemary
- 1/2 cup mascarpone cheese
- 1/4 cup plus 1 tablespoon dark honey
- 1 tablespoon rum
In a small saucepan over medium high heat, bring the honey and the rosemary sprig to a simmer. Lower the heat, simmer for 2 minutes more then remove from heat. Slowly dip the fig halves in the honey and place on a platter. Place lemon zest, remaining honey and rum in a bowl and whip using a hand blender until frothy. Cover and refrigerate. Cook the figs, cut side down, on a pre-heated grill over medium high heat just until they develop grill marks. Flip and grill for 1 to 2 minutes. Top with frothy cheese to serve.
Buttersweet Grilled Pineapples
What you need:
- 1 whole pineapple, sliced into 1-inch spears
- 1 stick butter, melted
- 1 cup brown sugar
- 1/2 cup Grand Marnier
- 1 plastic squirt gun
Place melted butter and brown sugar in separate bowls. Dip each pineapple piece in the bowl of butter then in brown sugar. Place pineapples in a pre-heated grill over medium-high heat. Fill the squirt gun with Grand Marnier and squirt pineapples. Flip each piece the squirt again. Repeat until grill marks show and sugar has caramelized.
Grilled Chocolate Apricots
What you need:
- 12 fresh apricots, pitted and halved
- 1/2 cup bittersweet chocolate, melted
- 1/4 cup slivered almonds, toasted and chopped
- Vegetable oil
Brush apricots with vegetable oil and place on a grill cut side down. Cook over high heat for 1 1/2 minutes or until golden brown. Flip each piece and continue grilling for 1 minute more. Transfer grilled apricots in a plate, drizzle with chocolate then top with almonds to serve.
