Strawberry With A Kick

What you need:

  • Juice and Zest of 2 limes
  • 1/2 cup strawberry jam
  • 1/4 cup fresh ginger, finely minced
  • 1/4 cup fresh mint, minced
  • 1/4 cup thin soy sauce
  • 2 tablespoons habanero hot sauce

In a medium bowl, mix together strawberry jam, lime juice, lime zest, ginger, mint, soy sauce and habanero hot sauce. Stir until ingredients are well-combined. If using as marinade, place in a large re-sealable plastic bag along with the meat and refrigerate for at least 1 hour. If using as sauce, brush onto grilled food just right before cooking is done.

Coffee and Honey BBQ Sauce

What you need:

  • 4 large cloves garlic, minced
  • 2 cups honey
  • 2 cups ketchup
  • 1 cup cider vinegar
  • 1/2 cup strong coffee or espresso
  • 1/2 cup soy sauce
  • 4 tablespoons extra-virgin olive oil
  • 1 tablespoon grey salt
  • Freshly ground black pepper

Heat the oil in a saucepan over medium-high heat then cook the garlic until tender, about 1 minute. Add the honey, ketchup, cider vinegar and soy sauce. Stir well. Sprinkle with grey salt then stir in the coffee or espresso. Top with black pepper. Stir to combine ingredients well. Bring sauce to a simmer then cook for 10 minutes more. Apricot and Habanero Combo

What you need:

  • 2 cloves garlic, minced
  • 1 large onion, finely chopped
  • 1 roasted yellow bell pepper, peeled and seeded
  • 1 1/4 cup water
  • 2/3 cup dried apricots
  • 1/4 cup habanero hot sauce
  • 3 tablespoons sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon cooking oil
  • 1 tablespoon powdered mustard
  • Salt to taste

Heat the cooking oil in a saucepan over medium-high heat then sauté the garlic and onion until tender. Add the yellow bell pepper, water, dried apricots, sugar and apple cider vinegar to the pan. Lower the heat and stir to combine ingredients well. Simmer for 15 minutes or until apricots are soft. When ready, place mixture in a blender or food processor along with habanero hot sauce, mustard and salt. Blend until smooth.
