- 1/2 teaspoon salt
- 1/4 teaspoon freshly-ground black pepper
In a small bowl, mix together garlic, grapefruit juice, honey, oil, grapefruit zest, salt and pepper. Stir until ingredients are well-combined. Cook the chicken breasts over medium-high heat on a pre-heated grill, brushing with glaze frequently, until cooked through. When ready, place grilled chicken on a serving plate. Grilled Lime-Sugar Honeydew
What you need:
- 1 large honeydew melon
- Finely grated zest of 3 limes
- 1/3 cup sugar
- Lime wedges
Combine the lime zest and sugar in a small bowl. Slice the honeydew in half, remove the seeds then cut into 2-inch wedges. Cook the honeydew on a pre-heated grill over medium-high heat, turning once, for 1 minute or until caramelized. Remove from heat and place on a baking sheet. Sprinkle with lime-sugar mixture and refrigerate until ready to serve. Serve with lime wedges.
Fruity Grilled Scallops
What you need:
- 1 kilogram large sea scallops
- 1 large honeydew melon, rind removed and sliced into 1/4-inch pieces
- 1 hass avocado, sliced into 1/4-inch pieces
- 2 tablespoons fresh lime juice
- 1 tablespoon extra-virgin olive oil, plus more for drizzling
- Finely grated lime zest
- Salt and ground black pepper
Mix together lime juice, 1 tablespoon olive oil and lime zest in a large bowl. Add honeydew and avocado then toss to coat. Season with salt and pepper. Drizzle scallops with olive oil and season with salt and pepper. Cook on a pre-heated grill over medium high heat for 3 to 4 minutes per side or until cooked through. Transfer to a serving plate.
